It Tastes Good (100-word challenge #2)

Bitterness gives way to richness, depth, complexity; delightful crunchiness gives way to muddy goodness. Instead of calling it bitter, the refined palate calls it chocolaty, and instead of calling it rigid or hard, the refined palate calls it al dente all’inizio, nutriente e dopo. The best chocolate is 85+% chocolaty. What does it taste like? I have here described how it tastes in both English and Italian.
